You won't hear screaming girls(boys? :p) in here.
4 tbsp milk
500g cod fillet
198g sweetcorn
6 spring onions, finely chopped
750g mashed potatoes
2 eggs
Breadcrumbs or 12 cream crackers
Oil
Put milk and fish in frying pan. Bring to the boil, cover and cook for 4-5 minutes, depending on the thickness of the fish. It should flake easily.
Stir the corn and onions into the mash and season. Remove fish with a slotted spoon and stir into the mash, taking care not to break it up too much.
Beat eggs lightly with a fork. Dip the cakes in egg, then the cracker crumbs. Heat a little oil in a frying pan and cook the cakes, four at a time, for about 3 minutes. Carefully turn and cook for 2-3 minutes until crisp and golden.
I haven’t tried this one yet… This should be nice for weeknights.
